Chicago’s spice house, which had an eclectic mix of ethnic foods and an eclectic cocktail menu, has fallen into disrepair.
The restaurant has been closed since February.
The owner says she had to close her doors due to high health costs, but it’s unclear how long she will have to keep it open.
“It’s a very expensive business,” said restaurant owner Maren Giese.
“We don’t have any savings, so we have to do something.
If you don’t do it right, you’re going to lose money.”
Giese said she started her restaurant in 1988 and has operated it for more than 25 years.
It’s now part of the Chicago History Museum, and the bar and restaurant has a restaurant sign out front.
“I feel that the building should have been sold to someone who could afford to maintain it,” she said.
“We’re in the process of trying to save the building, so that when it’s sold, we can get some sort of income.
It seems like a waste of money.”
The owner says the bar has a limited number of customers, and it’s difficult to attract new ones, as she doesn’t know what kind of food they like.
“There’s always a question of what is the future of the place?
Is it going to survive?
Are they going to stay?
Is there a place for it?”
“So it’s a big question mark for the future.”
According to the restaurant’s website, it was founded in 1988 by Maren and John Gieses, a married couple who were raising their two daughters, who were just a year and a half old at the time.
The Giesses say they opened the restaurant with a menu that included meatballs, fried chicken, and other meat-based items.
It was a “cute” place, they said.
But in the early 1990s, the restaurant became a hot spot for people with a “lifestyle” that was “exotic and out of date,” according to the website.
The restaurant also offered an extensive wine list.
“The food and wine was not very well-done,” Giess said.
Giess claims she tried to reopen the restaurant in the 1990s with the help of the Cook County Health Department.
But the department closed the building on February 16, 2018.
The Chicago History museum has been using the space as a cultural center for more recently.
The museum opened a new building on the south side of the property in December, but Giesse says that was the last time she could reopen the place.
The current owner is planning to buy the building and turn it into an upscale restaurant.GIESE said she’s worried about the fate of the other buildings at the site.
“A lot of things are going to have to be torn down to put this new building in, and that’s why we are so concerned about the future,” she explained.
“There’s no way for me to make a profit.
I’m not going to make enough money.
And it’s going to be a big loss for the neighborhood.
It is a really sad place.”
