4 Ingredients 1/2 cup ground flax seed 1/4 cup white flaxseed meal 2 tablespoons peanut butter 1 teaspoon baking soda 1 tablespoon soy sauce 1 teaspoon white vinegar 1/8 teaspoon cinnamon 1/3 teaspoon ground ginger 1/16 teaspoon ground cloves 1/32 teaspoon salt 1 tablespoon apple cider vinegar 1 tablespoon honey 1 tablespoon water (for baking) 2 tablespoons coconut oil 3 tablespoons butter 2 cups sugar (or 1/6 cup brown sugar) 3 tablespoons rice vinegar, optional (optional) Directions Preheat oven to 350 degrees F. In a large bowl, combine the flax, white flak, flax meal, peanut butter, baking soda, soy sauce, vinegar, cinnamon, and ginger.
In another large bowl combine the sugar, brown sugar, rice vinegar and honey.
Whisk until combined.
Add the remaining ingredients and stir until combined, about 2 minutes.
Pour the mixture into a small bowl.
Spoon the mixture onto cookie sheet.
Bake for 12-14 minutes, until lightly golden brown.
Let cool for 5 minutes.
Enjoy hot or cold.
Recipe Notes If you have a large cookie sheet, cut the dough into 8 inch pieces.
Place on the cookie sheet and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
If you don’t have a cookie sheet you can use a cookie cutter.
The cookies will be much easier to handle once cooled.
